Discover Our Story: Bourbon Aged Maple Syrup in Clinton, NY
Established in 2007, we began making maple syrup after visiting a local high school in the area that was hosting their annual “Maple Weekend”. We wanted to teach our children that you can create a natural and unrefined sweetener that comes from a maple tree right on our property.
What started out with a few taps and boiling over an open fire on a few warm and sunny days back in March of 2007, has over the years turned into something much larger than we ever imagined. We have since moved our main sugarbush to a larger section of woods where we have installed a tubing system that collects the sap from the trees into one main collection point. We then haul the sap “home” where we boil the sap in our sugarhouse the same day to ensure the absolute best quality maple syrup. We continue to boil with a wood fired evaporator as we feel it gives the syrup the most richest, traditional flavor possible. We sell our maple syrup at local Farmer’s Markets and Festivals each week during the summer and have it available all year round at our sugarhouse and local retail outlets. Besides our traditional maple syrup, we also make our own “maple bourbon barrel aged syrup and cinnamon aged syrup. Maple confections are produced in small batches in our licensed 20-C kitchen right on site, such as maple popcorn, soft molded maple sugar pieces, granulated maple sugar, seasonings, maple cotton candy, maple cream and more.
In 2020 we started to renovate a building on our property into our new retail store. It is something that we have always wanted to do but never had the time to with a full schedule of farmer’s markets and weekend festivals. With Covid-19, we actually found some much needed time to make that dream come true and on February 5th, 2021 we offically opened our doors with a new expanded retail space.
